Directions:

  1. Preparation: Wash the apples, quarter them or roughly dice them. You don't need to peel them!

  2. Mix: Place the apple pieces and sugar into the container. Pour in enough water to just cover the apples.

  3. Fermentation: Cover the container with the cloth and rubber band (important: air must be able to get in!). Leave at room temperature (18°C-25°C) for 7 to 10 days .

  4. Stir daily: Stir the mash vigorously every day to prevent mold growth and to supply the yeast with oxygen. Bubbles should soon form.

Step 2: Acetic acid fermentation (acetic acid bacteria)

Now the acetic acid bacteria come into play. They consume the alcohol that has been produced and convert it into acetic acid.

Directions:

  1. Straining: After 7–10 days, pass the mash through a fine cloth or sieve. Discard the solid apple pieces. Pour the clear, slightly cloudy liquid back into the container.

  2. Vinegar mother (optional): If you already have a vinegar mother, you can add it now to speed up the process. Otherwise, the bacteria will form on their own from the surrounding air.

  3. Maturation: Cover the container again with the cloth and place it in a dark, warm place. Now the vinegar needs to mature. This process takes 3 to 6 weeks .

  4. Check: After a few weeks, the vinegar mother should form on the surface. This is a sign of a high-quality, living vinegar!

  5. Enjoyment: Once the vinegar tastes sour enough, you can pour it into clean, sealable bottles and enjoy.
